Food-contact surfaces sanitized with a quaternary ammonium solution not exposed to the sanitizer solution for at least 30 seconds. Do not use equipment/utensils not properly sanitized. Observed employee was dipping pans for approximately 5 seconds in quaternary sanitizer and placing on drying rack. Educated Person in charge on proper sanitizing of food containers. Employee pulled the 3 pans and placed in sanitizer for at least 30 seconds.
