Raw animal food stored over/not properly separated from ready-to-eat food. In walk-in cooler, containers of raw chicken and raw beef stored over ready-to-eat sauces. Also, opened raw beef stored over vegetables in flip top reach in cooler in kitchen. Also, in walk-in freezer on the speed rack, portioned raw chicken stored over portioned raw beef. Employee began to rearrange all above products.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. No written procedures available. Provided DBPR 5030-104 via email.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No chlorine test strips available for dishmachine and wiping cloth solutions.
