Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Under dough press, cooked pizza cups with mozzarella (65F - Cold Holding) for 90 minutes per operator. Discussed with operator time and temperature regulations, operator returned to reach-in cooler for rapid cooling.

Food being cooled by nonapproved method. Observed cooked cheese pizza cups ambient cooling in closed thickly stacked plastic container in tall reach-in cooler. Operator removed lid and added ice.
