Raw ground beef was stored above raw tuna and raw chicken was above unwashed produce in the walk-in cooler. Printed English and Spanish Safe Refrigerator Storage handout and explained to the kitchen staff proper raw storage hierarchy.
Toxic substance/chemical improperly stored. Bottles of Old English furniture oil were stored commingled with Tabasco and salt and above single-service food packaging in the outdoor shed. Explained proper chemical storage to Operator.
Floor tiles missing and/or in disrepair in the back of the house. Numerous quarry tiles broken and missing, allowing water to pool. Discussed with Operator the need for smooth and easily cleanable (and dry) floors.
In-use ice scoop stored on soiled surface between uses. Ice scoop was stored on stop of the ice machine. Discussed alternatives for clean storage of the scoop with the Operator.

Caged bird on premises. Caged bird is located in outside dining area within five (5) feet of outside multiple dining tables. Operator has made a veterinarian appointment for the bird and is in the process of applying for a variance. Variance application is in process with DBPR, Tallahassee and Operator is in communication with the proper contact. Violation cited 11/01/23 and Time Extended on 01/05/24 and 03/05/24.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Operator removed fish from packaging.
Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. Observed drink discarded.

Food prepared in a private home. See stop sale. Fourteen (14) portions of rice pudding observed in the tall reach-in cooler. Operator stated product was made at home this morning.
Raw animal food stored over/not properly separated from ready-to-eat food. Raw ground beef and raw grouper were stored in the top of the maketable directly above ready-to-eat foods, such as yogurt and breads. Cook moved food to proper storage.
Toxic substance/chemical improperly stored. Rubbing alcohol and spray bottle of hydrogen peroxide stored on a shelf adjacent to breading flour in dry storage. Operator moved chemicals to proper storage. Peroxide-based cleaner was stored directly above frill picks and zip-lock bags in the outside dry storage.

Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Quaternary test strips were provided for testing the dish machine. Explained which strips were needed. Operator ordered proper chlorine test strips during the inspection.
No paper towels or mechanical hand drying device provided at handwash sink at the bar.
Accumulation of lime scale on the inside of the dishmachine.
Bowl or other container with no handle used to dispense food. Ramekin observed stored in a spice container. Operator removed ramekin.
Dead rodent present. Dead wild bird located in outside dining area three (3) feet from dining tables. Operator cleaned and sanitized the area during inspection.
Food stored on floor. Jugs of oil were stored directly on the floor in the outside dry storage area. Buckets of rice were stored on the floor in the inside dry storage area and directly under employee personal item storage.
Ice scoop handle in contact with ice at the soda station. Ice scoop at the large ice machine was stored directly on top of the ice machine.

Time/temperature control for safety food thawed in an improper manner. Bags of fish were thawing in the three-compartment sink not under running water. Inspector explained proper procedure to Operator and running water was started. Commercially processed fish was thawing in the ROP package without opening package. Inspector explained introducing oxygen into the package.
Wall soiled with accumulated grease, food debris, and/or dust. Heavy build-up observed under the three-compartment sink. Heavy build-up observed on the wall next to the soda dispensing machine at the server station in the back area. Walls in the walk-in cooler observed with a mold-like build-up.
Working containers of food removed from original container not identified by common name. Container labeled "Paprika" contained a white granular substance. Cook stated it was salt.
